Smoothie Sunday

As the self-proclaimed Smoothie Queen, it is my hobby/privilege/mission in life to create new concoctions to share with you.

My latest creation was inspired from the mound of nut butter packets that I have (or had) in my pantry from the awesome people at Artisana.

I carefully selected the walnut butter packet and giddily went to work on my new creation!

By the way, walnut butter is awesome!  This was the first time that I’ve ever tried it, and I instantly fell in love.

The “E” stands for  everything I feel about this smoothie: energized, excited, enthusiastic!

Oh yeah, it stands for “Erin” too.

Vanilla Walnut Smoothie

Ingredients (for 1 serving)
1/2 frozen banana
3 ice cubes
1/2 cup unsweetened vanilla almond milk
1 tablespoon walnut butter (any nut butter would probably work)
Stevia (or sweetener of choice)
1 teaspoon vanilla
1 scoop vanilla whey protein powder
1 handful of spinach
1 handful of kale (optional)
Dash of cinnamon (optional)

Toss everything in a mixer and blend until smooth!

I’m pretty sure that I say this every time, but this is one of my new favorite smoothies.  It was gone in sixty seconds flat!

      The packets are great, especially for traveling! I love to keep them in my purse when I am on vacation and going somewhere like Panera. I can whip them out and add them to a bagel. 🙂

    Loving the Tervis Tumbler – I use mine all the time for smoothies.

    I’ve never tried walnut butter, but I can imagine that it’s wonderful! 🙂

      Walnut butter is sort of like almond butter. I didn’t expect to like it as much as I did!

    I need to get adventurous and try some of these! I’m such a creature of habit with my peanut butter (sometimes almond butter!), but maybe this is just the push I need to try a new smoothie combo! xo Oh, and I def have a smoothie addiction, too! Tonight when we got home from the lake, all I wanted for dinner was a smoothie! That’s what happens when I don’t get one for a day or two. Oh well, not such a bad vice. 😉 xo

    Hi Erin,

    I was about to open my blog here at wordpress but i was attracted by your post All By Myself..and when I go into it..i found alot more impressive recipes. I love to cook too..and I know I can get alot of healthy recipes in your blog..
