Hungry Hungry Sicko
On Sunday morning, I listened to my body (and Lionel Richie), and I took it nice and easy.
Relaxing is not something that I do well. In fact, I kind of stink at relaxing. I’m the sort of person who pops right out of bed in the morning (kind of like a Pop Tart…but a healthy one…not a processed one, of course).
The most productive thing about all of that is that I got to practice my “Franck Eggelhoffer” impersonation (Martin Short’s character in Father of the Bride).
You’d think that having a runny nose, clogged ears, scratchy throat, and burning eyes that I wouldn’t really be hungry.
My body was totally still up for steak, wine, and popcorn Sunday.
One of the best parts of the meal was the sauteed mushrooms Michael and I sometimes pair with it. These are absolutely delicious and flavorful.
1 tablespoon Earth Balance (any butter will work)
2 cloves garlic, minced
1 1/2 lbs fresh baby bella mushrooms, sliced
1/4 cup low-sodium soy sauce
Black pepper (to taste)
Melt butter over medium heat in a large pan. Add garlic and saute for 2 minutes. Add sliced mushrooms, stir to coat, and cook for about 5 minutes. Drizzle soy sauce into the mushrooms. Sprinkle with black pepper. Continue cooking over medium heat for about 10 minutes or until desired sauce has thickened up a bit. Remove from pan and serve.
After dinner, we had popcorn and watched a movie (because you know, I didn’t watch enough movies earlier in the day).
I also convinced Michael that the only thing that could heal my sick body was an extra bucket of popcorn… so we popped two buckets last night.
Everything in moderation. 🙂
Listening to my body must have worked because I do feel a little better today. A visit to the juice bar just might be in order though.
How did you spend your Sunday?
Have a happy healthy day!
