Sunday Fun Day
When it is rainy and dreary out, I automatically feel like baking. I’m not sure why, but for me, the two just seem to go hand in hand.
Late yesterday morning, I peeked out my window at the gloomy sky and knew what had to be done.
I immediately went to work on some Sweet Potato Bread Pudding.
Sweet Potato Bread Pudding
2 large eggs
3 tablespoons honey
1/4 cup unsweetened almond milk (any kind of milk will work)
2 slices crumbled whole wheat bread (remove the crusts)
2 large sweet potatoes (mashed)
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/4 teaspoon allspice
1/2 tablespoon brown sugar
2 tablespoons chopped pecans (optional)
2 tablespoons granola (optional)
Preheat oven to 350 degrees. Coat a medium sized baking dish with cooking spray. Combine the eggs, honey, milk, and crumbled whole wheat bread slices in a large bowl. Beat with a mixer at medium speed to smooth. Add the mashed sweet potato, vanilla extract, ground cinnamon, and ground allspice to bread mixture. Beat until smooth. Pour mixture into prepared baking dish. Sprinkle with brown sugar and pecans, if using. Bake for 25 minutes or until pudding is set and slightly puffy. Sprinkle with granola (optional).
You can also serve it while warm with some vanilla ice cream. This makes about 6 servings.
After I made this yesterday, Michael and I had some and then I dropped the rest off to my mom (since she loves bread pudding). Once the drop-off was complete, we hit up Belk, and I got two new pairs of jeans. I’m so excited because I literally cannot recall the last time I got new jeans. I needed them desperately!
Michael also got two new pairs. 🙂
Since it was steak, wine, and popcorn Sunday, we watched a movie last night. We picked The Fighter with Christian Bale, Mark Wahlberg (who will always be Marky Mark to me), and Amy Adams. The entire cast was fantastic. I was especially impressed with the performances of Christian and Amy. Amy is such an amazing actress because she can pull off so many different characters. Her character in The Fighter was rough around the edges and nothing like the princess character in Enchanted…but Michael still thinks that she always has an innocent look about her (and I tend to agree).
Today is officially cleaning day…but not until I’ve finished my coffee and Puffins, of course.
