When your name is Erin, it is kind of mandatory to recognize St. Patrick’s Day.  In fact, if you don’t, little leprechauns come and haul you away to jail.

Since I am a law abiding citizen (and have a fear of leprechauns), I’m going to focus on all things green today.

First up, my favorite green foods from my recipes page.

Also in the spirit of St. Patty’s Day, here are some tips on how to incorporate more greens into your diet.

  1. Make your own juice at home or visit a juice bar.  All sorts of yummy concoctions can be made involving celery, cucumber, parsley, kale, and spinach.
  2. Drink green smoothies.  I’m a huge fan of these things and drink one nearly everyday.  I love using kale and spinach.  If you haven’t tried one yet, I can assure you that they taste better than they look.
  3. Have greens at breakfast.  I love sneaking them into omelets or adding them to breakfast sandwiches.
  4. Add them to your pasta dishes.  Spinach and pasta go together like peas and carrots.
  5. Snack on kale chips, celery, or cucumber slices.  I love dipping them in salsa or hummus.
  6. Ask for a salad or veggies as your sides when you order out in restaurants and try to incorporate a vegetable at dinner.  Six times out of seven, Michael and I have something green with our evening meal.

See? It’s easy being green!

Any plans for St. Patrick’s Day? We don’t have any big plans, but I’m sure there will be some beer consumption happening this evening.

Are you wearing green today? I put on a green cardigan this morning totally by coincidence.  Guess it was meant to be!

    Cute post! My last name is O’Neal so I know what you mean by it coming with the name! My aunts name is Erin, so she is obligated times 2! My favorite green food is probably broccoli. I don’t have any real plans for today except dressing in a cute green t-shirt and some 4 leaf clover hair bows! I also made my coworkers some cookies and am hoping to whip up some soda bread when I get home from work, I love it!

      Wow! Your aunt is the poster girl for St. Patrick’s Day! I love Irish Soda bread too, but I’ve actually never made it!

    I love all your green meals!! I am so trying that quinoa one. It sounds so so good!! I have a juicer but am HORRIBLE at coming up with recipes! Mine are always really fruit heavy drinks, which isn’t bad I guess, but I bought it so that I could consume more vegies! haha

      Definitely try adding a green veggie or two to your juice. I swear that you will hardly even taste it! 🙂

    I definitely wore my (bright obnoxious) green! I’m Irish by marriage haha (husband is 100%…still working on getting him to work on his accent 🙂 ). We are going out with some friends to a bar to celebrate. I just hope they have some potato soup!
