Anyone remember that song from Ren and Stimpy?

Guess what?  I made it!  It is my last day at my old job!

I’m super excited.  Beyond excited.  Over the moon.

At the same time, I will really miss some of my co-workers/friends at the office.  Over the past few weeks,  I’ve been treated to lunch, and I’ve received sweet cards, words, emails, and gifts.

I definitely got coffee with my Dunkin Donuts gift card this morning, and you can bet your booties that I’ve consumed some of these chocolates already.

I am a very lucky woman to have so many great friends (and not just because they hook me up with caffeine).

Last night, Michael and I had Hot Toddy Chicken from my beloved Trader Joe’s Cookbook.

Hot Toddy Chicken

2 pounds chicken thighs (I used chicken breasts.  I am sure this would taste awesome with tofu too!)
2 tsp olive oil
1 tube Trader Joe’s chicken Savory Broth concentrate (I used vegetable broth)
1/2 cup water
1/2 cup orange marmalade
2 TB whiskey
1 TB honey
pinch of red chili pepper flakes
salt and pepper

Season the chicken thighs (or breasts) with salt and pepper.  Heat the oil in a large saute pan over medium-high heat and brown the chicken on both sides.  When the chicken is browned, return it to the pan and pour in the broth and water.  Cover and simmer over low heat (10 minutes for boneless thighs, 25 for bone-in).  Combine the marmalade, whiskey, honey, and red chili pepper flakes and pour into the pan, stirring to combine with the pan liquid.  Simmer until sauce is thickened and thighs are well-coated and cooked through.  This serves 4 to 6.

I was thrilled that this tasted so good.  Otherwise, I would have felt badly for wasting Michael’s precious whiskey!

We both agreed that the dish tasted a bit like Chinese takeout (specifically orange flavored chicken). This recipe is a keeper!

I’m going to attempt to get through my good-byes today without crying.  It won’t be easy since I am such a mush!  I’m sure that I’ll be sobbing as I drive away in my car listening to Lionel…but there will mainly be tears of joy.

This is such an exciting time for me.  I’ve always wanted a career in nutrition and wellness and cannot believe that my dream is finally coming true.

When was the last time you cried happy tears?  Before this, I’d have to say that is was probably my wedding.

    I’ve been doing research for a project and have been reading about a bajillion engagement stories, I cry when I read almost all of them. Pathetic I know. Congrats on moving jobs!
