Thank You from the Bottom of My Chili Bowl

Why hello there!

It is Thursday and for me this week, it is Friday!  I took tomorrow off since I have some vacation days to use up before my last day of work.  And speaking of which, thank you for all of your sweet comments on yesterday’s post.  They all meant so much to me!

Since today is unofficially Friday, I stopped off at Dunkin Donuts for some french vanilla coffee.  Unfortunately, breakfast was somewhat of a disaster.  It seems as though our refrigerator got too cold last night, and it froze my overnight oats.  In case you were wondering, frozen overnight oats are not very good.

Our chili dinner last night, on the other hand, was delicious!

Despite its name, I was afraid that it wouldn’t be spicy enough for Michael, but it made his nose run.  According to him, a runny nose is the sign of some darn good spicy chili!

Spicy Turkey Chili

(Adapted from here)

1 1/4 cups green bell pepper strips
1 cup sliced onion
1/2 cup (1/4-inch-thick) sliced carrot
1/2 cup (1/4-inch-thick) sliced zucchini
1 pound lean ground turkey
1/4 cup chili powder (I used a little less since I’m a wuss)
1 1/2 teaspoons sugar
3/4 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon black pepper
2 (14.5-ounce) cans no-salt-added diced tomatoes with green chilis, undrained
1 (16-ounce) can kidney beans, drained
1 (15-ounce) can black beans, drained
1/2 (8-ounce) can no-salt-added tomato sauce

Heat a large Dutch oven over medium heat. Add first 5 ingredients; cook 5 minutes or until turkey is browned, stirring to crumble. Stir in chili powder and the next 8 ingredients (chili powder through tomato sauce), and bring to a boil. Cover, reduce heat, and simmer for 1 hour, stirring occasionally.

So healthy and so good!

I served these bowls up with side salads and tortilla chips.  And later, I had a Happiness Ball.  I couldn’t help myself.

This seriously made a lifetime supply of chili, so we’re having leftovers tonight. I put the rest in the freezer for a rainy day…or a day when I feel like a slacker and don’t want to cook.

What is your favorite comfort food?  For me, it would be chili, soup, warm bread, and cookies.  Gotta love cookies.

    my fav comfort food… OATMEAL.. oh my yes always oatmeal with pb and all the fixins!

      I totally forgot to mention oatmeal. It is definitely on my list!

    Cheese is totally my comfort food of choice. With bread, of course. Being lactose intolerant, that means my comfort is tough to find or painful. =/

    Looks good! I looove warm homemade bread, yummy oatmeal, and…does good coffee count?! 🙂
