Call Them What You Want
I hope that everyone is having a Happy Friday so far!
Mine began with some Dunkin Donuts coffee, of course. The flavor of the day is French Vanilla. I still miss the pumpkin, but this works. It is actually really good with unsweetened vanilla almond milk.
One random fact about me is that I eat small meals 6 times a day (sometimes 5 times). My body just doesn’t handle large amounts of food at one time too well. It likes when I spread the fun around!
My final meal of the day is usually a small snack after dinner, and a lot of the time the snack of choice is what I affectionately call Raw Balls. My husband laughs at the name, and yes, it probably could use some work…but the taste is what counts, right? 🙂
5 pitted dates (chop or break apart- or your food processor will get angry)
¼ cup unsweetened shredded coconut
⅓ cup whole cashews
½ teaspoon coconut oil
Combine dates and coconut in food processor and blend for a few seconds. Add remaining ingredients. When fully combined, roll the mixture into balls. If you have trouble keeping the mixture together, add a bit more oil. I also like to add a dash of salt and cinnamon. That’s it!

Did anyone see Oprah on Wednesday? I finally got to watch last night, and it was a great show about happiness. Goldie Hawn was a guest and said that we are born with a certain level of happiness naturally and then we have to find the rest for ourselves. It got me thinking (which is rare), and I do believe there is a lot of truth to her statement.
What are your thoughts on happiness? What makes you happy? My husband, my family, my dog, my friends, Lionel Richie music, good food, vacations, summer nights, watching a movie with my husband, dancing, warm bread fresh from the oven, cooking, and reading a good book all make me happy…among many other things!
Hmm…maybe I should combine both themes today and rename the Raw Balls to Happiness Balls!
