Onto another kind of meatloaf. Meatloaf Muffins! I’ve been making these for awhile now, and they are always a hit.
These little buggers are the perfect comfort food in winter. Plus, the portions are very reasonably sized, so you won’t fall into a meatloaf food coma after you eat them. Well, unless you eat all 12 in one sitting…
Turkey Meatloaf Muffins
(Adapted from here)
1.5 lbs. lean ground turkey
½ cup onions (scallions), finely chopped
1 cup plain breadcrumbs
⅔ cup ketchup
1 dash hot sauce
⅓ cup parsley, chopped
1 dash Worcestershire sauce
2 eggs and 1 egg white, lightly beaten
½ teaspoon thyme
1 teaspoon salt
½ teaspoon pepper
½ cup Annie’s ketchup or Simply Heinz
1 tablespoon brown sugar, Mix with 1/2 cup ketchup for topping
Combine all ingredients in a bowl and mix well until blended. Be careful not to over mix. Use an ice cream scoop to fill each section of a muffin pan (coated with cooking spray) with meat rounding the top to obtain a muffin shape. Brush with ketchup topping mixture and bake in a pre-heated oven for 30 minutes at 350 degrees. These freeze really well. Makes approximately 12 muffins.
